Day 3 – St Louis to Colby KS

On a trip like this, some days are “see stuff” days, and other days are a “let’s get there” days. Today was a “let’s get there day.” We were out of our hotel room (quite the stellar accommodations in St. Charles, about a half hour west of St. Louis) at 6:30 this morning, and twelve hours later we were in even MORE stellar accommodations (don’t believe me? check the photos) in the thriving metropolis of Colby, Kansas, about 50 miles from the Colorado border.

The highlight of the day was lunch at Joe’s Bar-B-Que in Kansas City, Kansas. This was Max’s pick and it was outstanding. Max had been there before on a trip with his Engineering team from Pitt a few years ago. It’s considered one of the best barbecue places the country and it didn’t disappoint. Spectacular food. Place is really cool (it’s actually in a gas station). We even got ribs to go and we just finished eating them for dinner about a half hour ago in our room.

A couple notes:

  • Kansas is loooong. And the farther west you go, the flatter it gets.
  • The longer our drive is, the loopier we get. (Just wait. You’ll see.)
  • 75 MPH Speed Limit on I-70 in Kansas. Awesome.
  • Yes, that’s a giant Budweiser I’m drinking. (Hey, it’s all they had at the Colby gas station.)

Tomorrow we see Chelsea in Denver!
